Zucchini Pizza





1 1/2   cups grated zucchini

1 egg

1 Tablespoon of chia seeds

1/4 cup oats or quinoa flakes( GFO)

1 Tablespoon finely grated parmesan cheese

1 Tsp Italian herbs


1/2 Tsp Italian herbs

4 Tablespoons Passata ( tomato pasta sauce) with 1 Tablespoon Extra Virgin Olive Oil

1 Tsp Italian herbs

1/3  cup mozzarella

1/4 cup olives

2-3 choppedMushrooms

Ham- 4 slices

Handful spinach leaves

METHOD  for Base

Combine zucchini , salt in a sieve over a large bowl  and set aside  for 10 minutes bowl.

Combine oats or quinoa , egg, chia, parmesan and herbs mix well combined then set aside.

Squeeze zucchini and add to oat mixture.

Spoon mixture onto  prepare tray  and use hands to spread mixture  on a 23cm pizza trat and bake for 20 min.

Once cooked flip and add toppings .

METHOD for topping

Add herbs to  passata , then spread on pizza, add remaining toppings , finish with mozzarella  , cook for another 7-8 mins or until  cooked .
