
Ingredients
- 1/4Cauliflower
- 1/4Broccoli
- 1 Carrots
- 1Small Sweet potatoes
- 1/4 Leek
- 1 -2 Clove Garlic
- Bunch chopped Silverbeet
- 1cup Pre soaked and cooked lentils
- 1 small chili
- 1 the Fenugreek
- 1 teaspoon Mustard seeds
- 1cup Fresh basil
- Drizzle of extra virgin olive oil
- 1 Teaspoon vegeta it other vegetable stock
- 1teaspoon vegetable broth (optional)
- 1/4 cup Amaranth
Method
- Add oil and fry garlic onion , fenugreek, mustard seeds, leek until sauté add all vegetables and fry till a little brown
- Add 1-2 litre water – stock , broth and basil bring to boil
- Add amaranth, lentils and Simmer for 20 mins
- Serve with truffle or EVOO
