Vegetable-Lentil-Amaranth Soup

Ingredients

  • 1/4Cauliflower
  • 1/4Broccoli
  • 1 Carrots
  • 1Small Sweet potatoes 
  •  1/4 Leek
  • 1 -2 Clove Garlic
  •  Bunch chopped Silverbeet 
  • 1cup Pre soaked and cooked lentils 
  • 1 small chili
  • 1 the Fenugreek 
  • 1 teaspoon Mustard seeds
  •  1cup Fresh basil 
  • Drizzle of extra virgin olive oil 
  • 1 Teaspoon vegeta it other vegetable stock 
  • 1teaspoon  vegetable broth (optional)
  • 1/4 cup Amaranth 

Method

  • Add oil and fry garlic onion , fenugreek, mustard seeds, leek until sauté add all vegetables and fry till a little brown 
  • Add 1-2 litre water – stock , broth and basil bring to boil 
  •  Add amaranth, lentils and Simmer for 20 mins
  • Serve with truffle or EVOO
