INGREDIENTS
serves 2-3
1/2 cup of Amaranth
1/4 Cup roasted Shredded or flakes coconut
1/8 Cup or 3 Tablespoons Chia seeds
1 cup of Soy Milk ( can use alternative milk if wanted)
1/2 cup of organic frozen berries of your choice
1 cup filtered water
1 Cinnamon Quill, 1 teaspoon cinnamon and 2 cloves
OPTIONAL
Honey or maple syrup to taste
Seed Mix (Pepita, sesame, sunflower, linseed, buckwheat nibs, hemp seeds)
METHOD
1: Mix water and Soy Milk together and bring to boil with Cinnamon quill, cinnamon and cloves.
2: Add amaranth and chia seeds simmer for about 3-4 mins .
3. Add coconut and keep cooking and stirring until amaranth is cooked.
4: meanwhile place berries in a glass microwave safe bowl and warm unit hot.
5: Place in 2 -3 bowls.
6: Place cooked Amaranth on top of berries, can drizzle with honey or maple syrup at this stage if needed.
7: Sprinkle with Seed mix if desire.
