Ingredients 
1/2-1 cup Amaranth
2-3 cups of water or almond milk or choice of milk ( May use half half – experiment with what you like)
1/2 – 1 Banana depending on size
1-2 dried figs ( if you have fresh use fresh)
1 Tablespoon crushed almonds. cashews, brazil or Nuts of choice- No peanuts
2 Medjool fresh dates
1-2 sprigs of FRESH thyme
Method
Place banana, figs and dates in a fry pan and cook slightly with a little water until brown and a little sticky – can also place under grill if wanted and pay drizzle some jarrah honey prior to grilling of pan frying . Put a side
Boil 2 cups of water/ milk , add amaranth and stir constantly until it had thicken a bit and bubbling and taste cooked. If it gets took think while cooking add additional water or milk as needed.
Warm a little additional milk .
Serve
Place porridge in bowl, add additional milk until the consistence is the way you like it
Add banana, figs, dates and sprinkle with nuts and Thyme sprigs .
